
I am always looking for easy delicious breakfast recipes to try. This recipe is a mixture of mini pancake bites and egg muffin cups. I tried to have something with more protein and nutrients than just a muffin which my kids are not big fans of. They are super delicious with basic ingredients that you may already have.
Additions/Substitutions
This recipe is a very versatile one and can be changed up many ways. I used breakfast sausage; this can be used with bacon or sausage. I used cheddar cheese but whatever you have/like is fine. I also used whole wheat flour, but all purpose is fine as well. I added vanilla protein powder instead of vanilla extract. This added some flavor and protein to them. If you have unflavored protein powder that will work also. I used stevia brown sugar, you can use regular can sugar, honey or your sweetener of choice.
Sausage Cheddar Protein Pancake bites

Cook Time: 20 minutes
Ingredients
- 1&3/4 cup Whole wheat flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 cup sugar
- 1.5 cups of milk
- 3 eggs
- 1/2 cup shredded cheddar cheese
- 1/2-pound cooked breakfast sausage
- 2 Tbsp vanilla protein powder
Directions
- In a mixing bowl, combine flour, baking powder, sugar, baking soda and protein powder.
- Add cooked sausage, eggs, milk, and cheese and mix well

3. Add 2 tbsp batter to the greased wells of a mini muffin pan.
4. Bake at 350 degrees for 20 minutes or until lightly browned, and enjoy
